Description
Cultivated mushrooms are sold in three different stages of development. The mature flat mushrooms are fully opened with visible gills. They are large in size and have a full-bodied, robust flavour.

Buying and storing
Select firm flat mushrooms that have a dry surface. Store in the fridge for up to three days in a paper or cloth bag to prevent sweating.
Preparation
Don’t wash mushrooms – just wipe them with a damp paper towel. Remove the stems if cooking whole or simply slice and use as desired.
